End-to-end test of the new tag-driven release pipeline. No functional
changes; bumps the version in lockstep across pyproject.toml,
server.json (× 2 fields), dxt/manifest.json, and the SERVER_VERSION
constant so the workflow's tag/version validators are satisfied.
