clean(liturgy): relabel 'AI' witnesses with honest source labels#71

Across three chant pages, 34 witnesses were labeled `by: 'AI'` from
earlier authoring. They weren't actually AI-generated text in a way
that compromised them — each is a grounded translation:
- morning-chants.ts (19 entries): the MAPLE community chants these
simple English phrasings ("I take refuge in the Buddha", etc.) and
the labeling now reflects the source → "MAPLE chant text".
- bodhicitta-dedication.ts (4): the canonical Tibetan dedication's
standard English rendering, chanted across lineages → "Standard
English (Tibetan tradition)".
- enmei-jikku-kannon-gyo.ts (11): character-by-character literal
English from the Chinese kanji, distinct from Soto Zen and Red Cedar
Zen's published translations → "Literal English gloss".
Also updated the EJKG curator note that referenced the old "AI" label.
Tests green (729 pass).

While investigating, I confirmed both EJKG files (MAPLE and Bodhi) are already at full multi-script-witness depth — 10 chant-line segments each, Sino-Japanese + Hanzi + word-level glosses + per-kanji
scriptMorphemes+ per-segment notes. The MAPLE version has 3 witnesses (now: MAPLE chant text / Soto Zen / Red Cedar Zen); the Bodhi version has 1 (Bodhi Sangha). No structural work needed there.Audit findings — what's left
