In our configuration reference docs, we provide information about the environment variables that affect the options.

Unfortunately, this list is not complete. Some configuration options can also be set using AIRFLOW__{SECTION}__{OPTION}__SECRET or AIRFLOW__{SECTION}__{OPTION}__CMD env variable. See: http://apache-airflow-docs.s3-website.eu-central-1.amazonaws.com/docs/apache-airflow/latest/howto/set-config.html
