ci: fix CmdStartStopITCase regex to handle line-wrapped URIs

Summary

• Fix all 6 CmdStartStopITCase tests that have been failing consistently (builds CAMEL-8424 Fixed transaction propagated when requires new #416-[CAMEL-8441] Add required 3rd party dependencies to the BOM #420)
• The --wide-uri flag (added in 6948646) uses OverflowBehaviour.NEWLINE which wraps URIs across multiple lines in narrow CI container terminals, breaking regex patterns that expect the full URI on a single line
• Add (?s) flag (dot-matches-newline) and simplify URI matching to timer.*? so line wrapping doesn't break the match

Test plan

• Compiles locally
• CI validates CmdStartStopITCase passes
