[doc] zh release-4.0.1: align heading levels with EN and translate section names#3768

…ction names The zh release-4.0.1 page had two issues: 1. Heading levels were one notch deeper than the EN page. EN uses `# Behavior Changes / # New Features / # Improvement / # Bugfix` at H1 and `## AI & Search / ## Lakehouse / ## Query` at H2; zh was using `## ...` / `### ...` instead, which shifted every section one level down compared to the EN sister page. Bring the levels in line. 2. Several section names were left in English even though the bullets under them were translated: `## New Features`, `## Improvement`, `### AI & search` (x2), `### Lakehouse` (x2). Translate them to `# 新功能`, `# 改进`, `## AI 与搜索`, `## 湖仓一体`. Also polish bullet wording: standardise period punctuation, escape SQL identifiers consistently, and remove a few stray spaces.
