[Docs] Update quickstart/building a streaming lake house

Description

The quickstart doc should be updated to use  standard Flink docker image instead of fluss-quickstart-flink image which include a conflict json version introduced by Paimon.
#1997 already update Real-Time Analytics With Flink part to use standard Flink docker image, but Building a Streaming Lakehouse should also use standard Flink docker image
