Some basic updates to the main README and links section of the site.

Updates the issue tracker to point at the core Geb issue tracker (this project) rather than the geb/issues project.

Updates pointers to the mailing lists towards the GitHub Discussions and Groovy Slack instead.

I'm not 100% sure we should completely ignore/bypass the mailing lists, as I believe they are a pre-requisite for ASF membership. However, there's no need to direct folks there when we aren't actively monitoring them.

Both mailing lists are abandoned and full of spam. They make the project look really bad, I was hoping they could be archived or something. I also think users now are much more likely to interact and engage with the forum than a mailing list.

There's also the discussion going on within the Groovy dev mailing list. https://lists.apache.org/list.html?dev@groovy.apache.org

It may be that will suffice for ASF requirements. I agree that either cleaning up the spam or archiving the lists are good options. We'll need to hash out which one we go with alongside the Groovy dev leads.
