NIFI-9652 Upgrade jetty-schemas from 3.1 to 5.2

Description of PR

NIFI-9652 Upgrades jetty-schemas from 3.1 to 5.2. Version 5.2 includes the same schemas as version 3.1, plus additional schemas for newer versions of various specifications. Version 5.2 requires a minimum of Java 8, which aligns with current NiFi requirements.

• If adding new Properties, have you added .displayName in addition to .name (programmatic access) for each of the new properties?

• Have you ensured that format looks appropriate for the output in which it is rendered?
