To access classes in a normal java project without any RCP functionality you have to use a wrapper. Additionally this solves a problem caused by different ClassLoader instances for every RCP plugin/project/whatever. The wrapper is a RCP plugin that provides the project's classes and itself is a RCP plugin. This plugin can be declared as a dependancy in the own RCP app and then be used to access the classes of the java project.
