chore: Update dependencies to fix security issues

• Bumped versions for several dependencies including @reown/walletkit, @sentry/core, @sentry/nextjs, @walletconnect/core, @walletconnect/utils, framer-motion, next, recharts, viem, @biomejs/biome, @types/node, jest, jest-environment-jsdom, lint-staged, turbo, ultracite, and vercel.
• Updated pnpm workspace configuration to exclude specific packages from minimum release age checks.

• Minor: Feature (non-breaking change which adds new functionality)
• Patch: Enhancement (non-breaking change to an existing feature)
• Patch: Bug fix (non-breaking change which fixes an issue)
