Fix release-demo: move amalgamation out of dist/ before sqlite-dist

sqlite-dist was choking on dist/sqlite-vec.c thinking it was a
platform directory. Now amalgamation goes to amalgamation/ dir,
and builds include static libs to match release.yaml pattern.
