Adds the foundational Zod schema types needed to support MCP Gateway configuration in the CLI. These schema changes define the type system that the gateway feature will be built on.

4 existing tests in mcp.test.ts now fail because their fixtures use the old schema shape (required toolDefinitions, no endpoint field). These test fixtures will be updated in a follow-up PR
alongside the gateway feature implementation.
