Fix: fix default home dir for client.toml

Description

• Fixes an issue where setting home to a different directory would not set correctly when reading client.toml, if the default home dir (~/.cantod) existed.
• ref. fix(simapp): fix default home cosmos/cosmos-sdk#19393
