docs(error-logging): fix prod workspace name
docs: analytics DEMI hourly table, prod log workspace, eagle-public client The builder reads DemiEventsHourly_CL, not the Auxiliary-plan DemiEvents_CL. Error counts come from eagle-logs-test in test and eagle-public-logs-prod in prod. Both eagle-public lines now vendor the eagle-analytics client.
