simulator in test is iphone17pro on ios26

Summary

Following the iOS release (iOS 26), bump the simulator used in tests.

still using Runner macOS-15 and not yet macOS-26-arm64.

I see builds have been failing after this change, timing out when waiting for the simulator to start.
Shall we bump to the macOS 26 runner (marked as in beta) or rollback this change (switch back to simulator 16 pro with iOS 18)?
