Trace beta conversations start, append, and restart calls across the Mistral client layouts, including streaming variants, and log them as task spans with conversation metadata and normalized outputs. Add VCR-backed regression coverage for wrap_mistral and integration setup on latest and 1.12.4 to cover the provider gap tracked in #273.
