I think it would be great if those values could be either hidden and/or marked as deprecated. I'm raising this issue since in Germany, a community-based effort of replacing crossing=island was made, and the new crossings popping up are mostly GoMap edits.
Arguably, given that the community has repeatedly stated its desire to move away from the top-level crossing key (except for crossing=informal, crossing=no) I wonder whether it would make sense to not offer a UI select option for crossing altogether, but I'm not sure whether that is something that would need to be changed in the iD presets.
