Remove v1 split for eventtypes components in web app.

• There has been little change, mainly just moved components, but it might be good to quickly check the event types section to see if you don't see anything weird.

• Renamed all the components in apps/web/components/v2 to be just under apps/web
  • This was done because we are no longer using v1 and v2 of our UI library. We have merged them into one, so there is only a single version now.
