This PR implements hopefully the last batch of breaking changes due to performance improvements in the library.
After this, the library is in a really good place: performance is on par with Ramsey.
There is still a few operations where Ramsey UUID is more performant (bytes to string and string to bytes) but not sure if I can optimise anything further.
