docs: state sync install scripts aren't easy to find in docs in callout and should use correct version

problem

this callout is not clearly visible in https://docs.celestia.org/how-to-guides/consensus-node#option-2-state-sync bc both @nuke-web3 and I missed it when trying to do a quick node sync

proposed solution

use the correct version for latest network version in the links to this with latest tags

kind of like

git checkout tags/{{mainnetVersions['app-latest-tag']}}

git checkout tags/{{mochaVersions['app-latest-tag']}}

git checkout tags/{{arabicaVersions['app-latest-tag']}}
