what is missing to make the public ip-address proxy act as a gateway for the internal actual server, so that it can do connects to port 25 of other public internet servers?

May be just possible if ISP allows this. If not, then you need to also setup nftables on the chatmail server to somehow forward it to VPS, I have no solution here.
