Feature request: Add Canadian English as a language option

When I'm using Handy, I constantly have to go back and correct the spelling in half the words because it seems to insist upon using American English, instead of my preferred Canadian English. How hard would it be to add Canadian English as a language option for those of us who prefer it?

If this were easy to do, having this option available would save many users quite a bit of work correcting the misspelled words that result from selecting the current (American) English option.

For the time being, I would maybe check out using the post-processing feature (cmd/ctrl+shift+d) to open the debug menu to enable it. It could probably easily do something like this. Otherwise the models themselves are trained to output some tokens so without direct regex replacement kind of stuff and rules for this, it's not very realistic. I think we have a feature that is being worked on which might ultimately help solve this in this PR #455
