chore: remove RxJava dependency entirely#730

RxJava was no longer used in any application code. Remove all traces including rxjava, rxandroid, room-rxjava3, and kotlinx-coroutines-rx3 from dependencies and version catalog. Signed-off-by: Brandon McAnsh <git@bmcreations.dev>
