Update release workflow

After a release was created, the readme should be updated with the new tag in default branch as well as in the new tag itself.

Updating tags after release is a no go so I probably will have to move to a release branch:

• Merge from default branch to release branch
• Run changelog and draft release for the branch with a future release version
• Auto publish the release?
• Create a manual release action?
