docs: rewrite README for newcomers in a warm, plain-spoken voice; full evidence record preserved unsimplified at docs/evidence-program.md

315 dense lines -> ~100 approachable ones. The honesty model (refuse-don't-
guess, derived-never-authored, named nonclaims) is now the story instead of
the fine print; current-state candor kept (react end-to-end, angular stops at
build on named defects); all nine proof sections live on verbatim in the
deep-dive doc.
