[ENH] `pkg_resources` is deprecated, generates warnings upon use

What happened?

Currently, conda-pack relies on pkg_resources, which has been deprecated in favor of importlib.resources. Using conda-pack generates deprecation warnings about this.

I'm happy to pick this issue up and make a PR for it, as long as nobody objects?

It's great that you guys fixed this, but things are expected to break starting this December if this fix is not released.
