Simulated flaps at top of UI

So with the effects turned on, I realized the simulated flaps within the UI don't start right away. They actually start after the real flaps are done moving. I wasn't sure if you were aware of that or not.

Fixed in feat/transition-style-speed: send_to_display updates current_display_string before the serial loop so sim reflects new text immediately.
