bug(release) latest docker tag not matching release version

Description of the bug

I'm using latest docker tag but it seems many more commits are going into main and getting pushed with latest tag after the last release version. I would expect latest to be latest release not be pre-release commits. Maybe this is expected then I would like to have a static tag for only stable releases. Maybe have everything to go develop until your ready to publish a release?

Heya @eanzie, latest is usually stable as every feature that is merged is tested as a PR beforehand. The versions just signify snapshots for people to pin to. Perhaps it may be worth it to add a stable image that points to the latest release
