refactor: mv mechanical markdown tests to pytest native

Currently our build pipeline uses mechanical markdown to test all of the quickstarts. We want to move away from mechanical markdown (readme driven testing) to leverage Pythonic ways using Pytest native testing approaches.

Acceptance criteria:

• no more mechanical markdown anywhere
• tests are updated to use pytest
• build workflows ran against PRs are updated accordingly
