Update tailwind and change mode to JIT

There are deprecations in the latest tailwind that the dapp is still using from an old version. Tailwind needs to be updated as well as the mode in Tailwind.config needs to be switched to JIT (just-in-time) mode to allow for easier use of one-time values without having to add raw CSS styles.
