docs: FastembedLateInteractionRanker - refactor docs

• part of FastEmbed Late Interaction Ranker haystack-core-integrations#3167
• docs for this component were originally introduced in docs: add FastembedColbertRanker documentation page #11092 when the component was still a draft

Proposed Changes:

• adopt the final component name
• simplify the pipeline example to use FastEmbed components (not Sentence Transformers)
• copy unstable docs to stable docs (component already available)
