  1. Bump anthropic client to 1.1. It's currently coded against the 0.4, pre v1.
  2. Fix kwarg from access_key to api_key
  3. Use new message instance over response hash
  4. Update models list

* fix anthropic client kwarg from access_key to api_key

* bump anthropic gem to ~> 1.1, which changes access_token to api_key

* bump default anthropic model

* update anthropic model to use messages.create

* update anthropic#format_response to use message instance

* update anthropic model list
