Use SemVer with CalVer for Vortex development

Vortex currently uses CalVer to replicate consumer site behaviour when it comes to CI and releases.

This, however, is blocking major version development and LTS support for older versions.

We need to update all configs to support SemVer + CalVer: 1.2.3-2025.10.0.
The good news is that SemVer will consider 2025.10.0 as a description part of the version and will simply ignore it when resolving versions.

Once this is implemented, a 1.x and 2.x branch split can happen to unblock 2.x development.
