ElasticSearch: Add setUseDocStore(true) on ExpressionList ... for fluid query style

So it was on Query but not on ExpressionList so that can be a little confusing in fluid style query construction.  This adds the setUseDocStore() method to ExpressionList (and JunctionExpression).

Also missing was setDisableLazyLoading() and setDisableReadAuditing() so also adding those.
