I20221003-1800: Fix failing WorkbookEditorsHandlerTest on Windows OS

- Part of the tests where not OS agnostic (hard coded file separators).
  The tests now use File.separator.
- IPath#removeFirstSegments doesn't drop the Drive letter on windows.
  Using NIO Path for this part now.
