Explore consolidating Obs and Sec self-managed LLM connector examples

Description

We have self-managed LLM connector setup guides for both security and observability:

• https://www.elastic.co/docs/solutions/security/ai/connect-to-own-local-llm
• https://www.elastic.co/docs/solutions/security/ai/connect-to-vLLM

Can these guides be consolidated and/or moved to the new AI section? They were developed, as far as I understand, separately, by different product teams. Some of the nuances may be different. We should explore whether they can be moved into the new AI section in explore-analyze.
