This doesn't work in Arduino IDE, but if you can use the arduino-esp32 as an IDF component, you have the option of enabling the Core Dump feature of ESP-IDF. When enabled, this feature can be used to store the stacks and registers in Flash, and later you can decode the backtrace using the esp-coredump tool.
