Fix typo in chain-operators tutorials documentation

Summary

Fixed a grammatical error in upgrade-op-contracts-1-3-1-8.mdx where "And then create" had two spaces between "then" and "create". Changed to single space: "And then create".

This was found during a comprehensive review of all 17 documentation files in the chain-operators/tutorials folder.
