fix: update nodejs version

This updates some old packages to the latest version and updates the engine version. This is in preparation for migrating the package manager to pnpm, adding Typescript, and updating the tests to use Vite instead. If the last item isn't possible, I will at minimum update how the tests are written.

Prior to this, if I attempted to update the packages or the NodeJS version; I would get caught in an endless loop of recursive dependencies.
