ESPHome to InfluxDB Gateway

To prevent bit rot, the project documentation resides in the versioned code, at ./docs/. There are four branches of interest:

master - stable Java
dev - development Java
kotlin - stable Kotlin
kotlin-dev - development Kotlin

Unless/until further announcements, there will be two release trains:

Java code will have the odd major semver version;
Kotlin code will have the even major version.

At the moment of writing, Java is very stable, Kotlin is still in active development.
