Exclude extra files from publishing

While exploring the "Files" section on JSR (https://jsr.io/@iroha/core/0.1.0), I found there some extra files, e.g. test specs.

This task is to remove these extra files from publishing, by configuring `publish.exclude` section in `deno.json`.
