Bump / revamp

Hey @iamluc this is basically a fully revamp of the repo:

1. bumped all the deps so we can actually do the work
2. switched to sigwin/docker-php which is our detached fork of the original repo, but updated and cleaned up, it also uses latest PHP and modern deps

We can do this here if you're interested or I'll just do a hard fork here too, let me know, thanks!

Decided to not pursue this further, I've created a drop-in replacement for this project in Rust here:
https://github.com/dkarlovi/docker-hostmanager.rs
