Switch the default gRPC target and docs from grpc.etu.natwelch.com to grpc.etu.timeclimbers.com to match the infra repo update. The backend host will not redirect, so users on old binaries will lose access once DNS for grpc.etu.natwelch.com goes away — bump and re-release.
