[Feature] Show recent activity in the Server Stats admin page

I have searched the existing feature requests to make sure this is not a duplicate request.

The feature

In the aim to monitor the usage of my immich server, it would be useful to have a list of recent activity in the server, e.g. :

• 10am: user1 uploaded 10 assets
• Yesterday: user2 logged in
• ...

This would nicely fit below the existing server stats with a "Recent activity" list in the Administration section. Thank you!
