[Feature] ios test flight support, or a stable client app

love the app. congratulations for maintaining and launching a successful product.

i appreciate the acknowledgement that v1 moniker has been misleading wrt breaking major changes.

moving forward, for v2, i suggest some changes around server<>client pinning:

1. create a immich-LTS app version which gaurantees compatbility with last couple LTS server versions.
2. continue existing usage of immich mobile apps: as a bleeding edge, backwards breaking client.
3. only deploy the LTS app when its been verified against the prior LTS server versions.

this gives users the option of using the latest app, against the latest server.

or a stable app, with trailing features, on a trailing SLA.

#5103 is somewhat related.

for my specific use case i have 2 iphones, the phone for work mandates latest app updates, the personal phone i can disable appstore updates. but my work phone gets updated with latest mobile immich app and it forces me to go through the process of updating my docker.
