[INFO] Migrate to proper Maven Central Publishing

For now we will do this, we will look into migrating to proper Central Publishing once it is ready

Currently we are using a CURL method to manual endpoints to stage the repository. Ideally we should be able to do it via Gradle directly so this is a low priority issue to remind us to switch once it is ready.
