It would be great if we could have Docker image tags such as stable-java21, stable-java17 etc so that we can get the benefits of the latest stable versioned release, pinned with a specific JDK version. Currently I have a server that needs Java 21, and I have opted to use the java21 tag to meet this requirement, but would much prefer to be pinned at the latest stable release as I do with my other servers that are more flexible on Java version.

If I am misusing the images/config and there is an alternative method, please let me know! (And perhaps that could be linked in the docs with the description of the stable image tag). Thanks
