Bump embassy dependencie on demo apps to their latest. We're also leaving ESP32 alone for now as it won't compile with latest embassy-executor.
The constructor is `new_target()` fix it to get the demo to compile.
Also build esp32c3 with checkall.sh otherwise regressions may be missed.
Build esp32c3 in CI too.

Bump all relevant dependencies to their latest except on ESP32 demos which cannot, yet, compile against latest embassy-executor and embassy-time. While at that, also fix a but in esp32c3-serial's instantiation of
RxWorkerand add that demo tocheckall.sh.
