Add more CPU arches to releases (s390x and PPC64le)?

I'm trying to adopt mise for use in the mongo-tools project. We build for a lot of platforms, including Linux on s390x and PPC64le. Right now, there are no mise releases for these platforms.

I'd like to submit a PR to include these in the release workflow, if that's something that could be merged.

sorry, I wouldn't accept any new platforms for the tarballs, you should be able to build with cargo though

Can I ask why? You're already using cross, so adding this is just four more lines in the release.yml matrix.
