Depends what you're doing. They have some overlap but are mostly quite different in how they work.

defoveride is global while fork is more local -
only active on the layer you use it on. If there is a scenario you want the original key behavior restored, I would avoid defoverride.

I know it. But, I was more interested in how they differ more in low-level.

Fork will have less overhead but then difference will be mostly negligible in face of system calls triggering context switching read/write and even sleep/wake.
